Roasted Red Pepper Hummus Recipe


  • Garbanzo beans - 15 oz
  • Tahini - 1/4 C
  •  2 Red bell peppers
  • 1-2 Lemons
  • Garlic - 1/2 clove
  • Olive oil - 2 T
  • Cumin - 1/2 t
  • Salt - to taste)

Step 1

Cut bell peppers into pieces and place on a baking sheet.

Step 2

Broil peppers 5-15 minutes until skin is charred.

Step 3

Place peppers into a sealable bag for 10-15 minutes.

Step 4

While peppers are cooling, juice lemon until you get 1/4 cup liquid.

Step 5

Peel skin off of bell peppers.

Step 6

Blend garbanzo beans, tahini, lemon juice, olive oil, garlic, cumin, and salt. Add bell peppers (save a couple of pieces to garnish) and blend until smooth.

Step 7

Garnish your hummus with chopped bell peppers and voila! A delicious bowl of hummus you can use as a dip for veggies or to add flavor to your meal.
